Cut-Out Butter Cookies

So it's the June holidays. 

Before the holiday approached, the kids and I were drawing up a list of things to fill up our time during the days. High on the list was BAKING. Seems that the girl has inherit my love for baking! So I was googling for an easy recipe which she could do with minimal help and I came across this recipe from beautymeloverecipes' blog. Coincidentally I just bought two cookie cutters from Daiso and we were excited to try them out.


Before we began, I asked her which mixer would she like to use. I was hoping that she will be opting for the lightweight Philips mixer, but she chose the Kenwood. So no choice, I had to lug the mixer from the kitchen to the living room.
 The recipe required the dough to be chilled for about half an hour.

So while that was happening, guess who had to do the washing up? Ugh.

 Half an hour later, it was time to roll...
...and this was the dough made from one of the Daiso cutters. The other one which I bought just did not work. So to the trashbin it went.

 she eventually gave up on the smiley faces as it required a whole lot of dexterity to extract the dough from the cutter and requested for the normal cookie cutters..

 and they are ready! I think I left them in the oven too long thus the extra browning on the sides. BUT they tasted really good. Full of buttery goodness!

Ingredients:


  • 100g butter (softened at room temperature)
  • 80g caster sugar
  • 1 egg yolk
  • 180g cake flour
  • 20g corn flour

Directions:

1. Sift cake flour and corn flour together and set aside. Line baking  tray with baking paper.
2. With electric mixer, add sugar to the butter in 2-3 additions and cream till the mixture turns pale and fluffy.
3. Add in egg yolk and mix well.
4. Add sifted flour mixture in 2-3 additions, stir with a spatula to form a soft dough.
5. Place dough in a plastic bag and flatten with rolling pin.
6. Refrigerate the dough for about half an hour.
7. Remove dough from fridge. Roll out dough on slightly floured work surface and cut out with slightly floured cookies cutters.
8. Bake at pre-heated oven at 175 deg C for 15-20 mins. (cookies should not turn brown).
9. Let cool and store in air-tight container.

Hmm...cook.eat.share doesn't seems to sound so right. Who will share AFTER they have eaten? If that makes any sense at all. Anyway...I'm going to TRY my best to document my cooking and baking escapades here and joining monthly bake-alongs just to have an excuse to cook or bake lol. Watch this space!
